Alex, who has heard of the Everstones, knows that these stones are relatively rare and unpopular with trainers. Thus most of them are not sold for a lot of money. Or at least not if you factor in their rarity.

I can have Combusken carry this [Everstone] and try to improve the potential of Combusken with items to the Deep Gold rank. For other trainers, it is almost impossible to know the talent of a Pokémon as accurately as Alex can. Thus Everstone is not much of a use to them.
They can know that a Pokémon is on the S rank. But unlike Alex, they don't know whether a Pokémon is Shallow Gold, Gold, or Deep Gold. Which makes it almost impossible for these trainers to know how long their Pokémon has to hold the Everstone.
Alex doesn't bid on First Everstone and Second Everstone. He thought that the price is probably best at 3 or 4 Everstone. The 5 is the last chance to get one, so Alex thought that this Everstone would probably not be cheap to win the bid.
